This is another one of my super quick, healthy and “can’t go wrong” recipes. The ingredients below can be substituted with almost any combination of nuts and seeds for a yummy snack!
The recipe below is for a Thermomix, but of course you can just use a food processor.
- 20g cacao powder
- 60g rice malt syrup
- 70g pistachios (shelled)
- 50g sunflower seeds
- 40g desiccated coconut
- Line a tray with baking paper (I use a loaf tin, but this depends on what thickness of the slice you would like).
- Add all ingredients and mix spd 7, 30 seconds (or until well combined).
- Press firmly into tray and refrigerate.
- When hard, slice and return to the fridge.
You could roll into balls if you prefer – simply roll after step 2 and refrigerate!
If you make with a food processor instead of a thermomix, add some coconut oil to the mixture to help it bind together.
Try anything you like – for example, change the nuts to cashews, or the seeds to sesame.
