Nothing says summertime like a refreshing icy pole! Unfortunately many of the store brought variety contain a large amount of sugar (yes even the ones that are targeted at children).
Luckily it’s actually very simple to throw together your own healthy icy poles in a few minutes. The added bonus is if you do have little ones they can help – in our house Miss H loves helping make the “i-poles”, the only issue is explaining she can’t eat them straight away!
I have a couple of styles of icy pole “moulds” I use, however I feel the best ones are from Ikea (which we received as a Christmas gift, perfect!) as they are a smaller size – perfect for toddlers.
A final point to note – I have labelled these sugar free but of course there is still fructose in the recipe, so these icy poles should be thought of as a treat!
Enough from me – enjoy!
- Fruit of choice
- Coconut Water (I only use Raw C as it has no added sugar or nasties which other brands often do)
- Place your fruit of choice into the icy pole moulds (I generally chop them in the thermomix first so they are smaller pieces).
- Fill mould up with coconut water. Place stick into mould and pop in the freezer to set. Easy!!
No tips – how could you go wrong!
Anything – add any combination of fruits you like. I love mango and peach or nectarine, plain mango, berries….
Use coconut cream instead of coconut water
