So I’m kind of cheating this week, with yet another icy pole/ice cream style recipe. This is another one so simple, I shouldn’t really be posting it as a recipe….
Anyway, this “ice cream” is so quick to throw together and is a great alternative to real store brought ice cream, custard or other deserts. As I always say, given the fruit content these do have a higher amount of fructose, so this should be a treat only (and be mindful of how much fruit you or your little ones have already had during the day!). To reduce the fructose, reduce the fruit you use and add more yoghurt – but a warning, this will change the consistency so it’s not so creamy!

- Frozen fruit of choice (I freeze bananas and mango to use for such an occasion!)
- Natural Yoghurt (always read the label to make sure you are just buying yoghurt, as some brands add sweetener in)
- Place your fruit into Thermomix bowl and add yoghurt – roughly 100 grams of yoghurt per large piece of fruit.
- Blitz on spd 9 until you reach desired consistency – around 20 seconds. If you want it creamy like actual ice cream, just adjust your fruit/yoghurt to achieve that consistency.
- Eat straight away – yum!
No tips – how could you go wrong!
Anything – add any combination of fruits you like. We love banana and mango….
